delicious muffin recipe

(vegan) Pumpkin Muffins

1 3/4 cups white flour
1 Tablespoon baking powder (I use aluminum-free)
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/2 teaspoon allspice
1/8 teaspoon cloves

1 cup pureed pumpkin (half a can of Libby's)
1/2 cup soy milk (make it 3/4, says I)
1/4-1/2 cup vegetable oil
1/4-1/3 cup maple syrup (to taste. I prefer my muffins to be only mildly sweet)

Mix dry ingredients and wet ingredients separately. Combine and mix only long enough to get everything moist, then load into muffin pan and bake for 15 minutes at 400 fahrenheit. I put a walnut on top of each for crunch and textural interest.

SO F'IN GOOD.

actually, i have a can of sweet potatoes that i might use instead. i bet it tastes just as good. mmmmm. thank you!

Sweet potato sounds GREAT. You prolly wouldn't even need the maple syrup if you used tater, too...

Does this work for large cake as well, for I have no muffin tins?

My guess is that it would work pretty well for a large cake but that it'd need longer baking time. You might also try using less liquid, as it wouldn't dry out as fast.
